About how thick are the strips cut for a deck?

1/4" [6mm] is the standard.

Matt, Can the panels on the Freedom be built out of strips while flat and then assembled as craiggamesh did with his Pirogue.

I'm guessing no. There's some twist in the Freedom panels where are there's only a bend in the pirogue panels.
